Food grade calcium chloride products are used in post-harvest treatments of fruits and vegetables to help preserve freshness, maintain firmness and prevent certain diseases and decay. Application of calcium chloride can also have a beneficial effect on nutritional value, increasing calcium content. Fruits and vegetables are often dipped in calcium chloride after harvesting to enhance firmness and post-harvest shelf life. Calcium chloride treatment after harvest can also increase calcium content in some fruits, such as apples, to reduce storage decay. Post-harvest application of calcium chloride has been shown to extend the ripening time of peaches as much as 30%, enhancing the commercial value of this highly perishable fruit. Calcium chloride applications are often used to enhance the firmness of sliced fruits and vegetables such as cantaloupe and carrots sold in grocery stores.
